With the resumption of face to face learning in Correctional Centres and the removal of COVID Restrictions, BSI Learning jumped at the opportunity to deliver training to correctional officers in Broken Hill CC.

Correctional Staff from Broken Hill recently completed a unit of competency which delves into the detailed practices of rethermalizing and chilled and frozen foods. Theory and practical demonstrations included in this course are key in the successful operation of kitchens in correctional centres across the state. This course was tailored to the working environment where participants were involved the preparation of chicken, beef, desserts. Learners also prepared the reheating of inmate meals for the centre. Through the preparation of these meals and ingredients the officers were reminded of methods, policies and procedures to eliminate the risk of food poisoning that may result from ill prepared meals.
